Purple/Blue Foods

I have decided to combine the Purple and Blue food group for the February Challenge. The common thread with purple/blue foods is they contain a flavonoid called anthocyanin. This substance gives these foods their distinct color and acts as an antioxidant, has anti-inflammatory, anti fungal and anti cancer properties. Below is a list of purple and blue foods:

Blueberries- vitamin C, fiber, one of the best antioxidant sources out there

Beet Roots- lowers blood pressure, improves athletic stamina, folate, mangensese,

Eggplant- good source of trace minerals, potassium

Figs- magnesium, manganese, calcium (which promotes bone density) and potassium, as well as vitamins, principally K and A, as well as folate and choline.

Purple Potato- potassium, vitamin C, vitamin B6, and the antioxidant, anthocyanin, which has been studied as an immune system booster. 

Red Cabbage- vitamin C, A, contain anti-cancer compounds

Purple Cauliflower- vitamin C, fiber, vitamin A, folate, calcium and potassium as well as selenium, which works with Vitamin C to boost the immune system

Blackberries- potassium, magnesium and calcium, as well as vitamins A, C, E and most of our B vitamins

Acai Berries- major source of antioxidants

Plums- contains a large variety of nutrients but not a large quantity of any one nutrient

Purple Carrots-dietary fiber, vitamin K, vitamin C, potassium, and manganese
